One dough, so many uses!!!

If you’ve been following us on Instagram or Facebook you will know that a while back I discovered Yoghurt Dough and I am now obsessed with it! I love using it to make Pizza Bases, Flat Bread, Dinner Rolls, Scrolls, Pretzels and it even loosely passes as Bagels. It is so easy to make that the basic dough is whipped up in 5 minutes and it’s versatile enough that it can be used for sweet or savoury baking. Below is the recipe for the dough and then all the variances I have tried to far. If you come up with a new use for it, I would love to hear about it!

Yoghurt Dough

This dough is super easy to whip up and can be used to make Flat Bread, Pizza Bases, Dinner Rolls, Pretzels and sweet or savoury Scrolls.

  • 2 cups Self Raising Flour
  • 1 cup Plain, Unsweetened Yoghurt (Greek is great)
  • 2 tbsp Oil (Olive or Grapeseed)
  • 1/2 tsp Salt (If making sweet dough omit the salt and add a tablespoon of sugar instead)
  1. Mix all the ingredients until combine and knead dough for about 5 mins (I used the dough attachments on my hand mixer or bench top mixer and kneed for maybe 3 minutes).

    If it’s quite sticky add a bit more flour.


Yoghurt Dough Flat Breads

I make these in place of Naan Bread every time we cook an Indian Curry for dinner. My kids love them and Master Four prefers these over store bought Naans.

  1. Heat oven to about 70°C. This is to keep the flat breads warm until ready to serve.

  2. Weigh and divide the dough into even sized balls. (I use half the dough recipe and make it into 3 flat breads when I cook Indian for dinner).

  3. Roll each ball out till they are quite thin (about 2-3 mm).

  4. Heat a frying pan with butter in, until it's nice and hot. Place one of the flat breads in and cook until it's lovely and golden.

  5. Flip the flat bread over and spread some butter over the cooked sized.

  6. When the other side is golden and it's cooked through, place it on a paper towel on a plate. Spread butter on the side that just cooked and place in the warm oven.

  7. Repeat with the rest of the dough, keeping them in the oven until needed.


Yoghurt Dough Pizza

This is such a quick way to make Pizza base and I love that there is no waiting around for a yeast dough to rise. I also like that I'm not adding yeast to my diet!

  1. Heat pizza oven or regular oven (about 180°C fanbake).

  2. Divide the dough into two even sized balls.

  3. Roll each half out to about 5mm thick and use a fork to stab holes all through the dough.

  4. Top with pizza sauce and what ever toppings take your fancy.

  5. Bake for 15ish minutes until golden on top.


Yoghurt Dough Scrolls, sweet or savoury

Yummy Scrolls are a great treat for the kids, quickly whipped up as a plate to take and even taken to a picnic lunch. There are so many filling possibilities that I never tire of these Scrolls.

  1. Preheat oven to 180° fanbake.

  2. Use a rolling pin to roll Yoghurt Dough into a rectangle about 1 cm thick.

  3. Leaving a 2 cm strip clean at one short edge, spread with your choice of fillings.

  4. Roll from one short edge to the other "clean" edge and press to seal.

  5. Slice into about 8 pieces and lay flat on lined baking tray. I added another wee sprinkle of cheese on top here.

  6. Bake for about 15 minutes until golden and cooked through. 

  7. Cool slightly and then dig in!

Filling Ideas
  1. Pizza sauce, chopped ham, grated cheese and a sprinkling of Italian Herbs

  2. Tinned spaghetti and cheese

  3. Marmite and cheese

  4. Basil Pesto and cheese

  5. Butter, brown sugar, cinnamon and raisins (use sweet dough)

  6. Butter, brown sugar, cinnamon and grated apple (use sweet dough)

  7. Blueberry and custard (use sweet dough)


Yoghurt Dough Pretzels

These yummy soft Pretzels are very quick to make.

  1. Preheat oven to 180°C fanbake and add 5 cups of water a saucepan and bring to the boil.

  2. Divide the dough into even sized balls (I make six large Pretzels from one quantity of Yoghurt Dough).

  3. Roll the dough into a long tube.

  4. Take the ends of the tube and twist them together.

  5. Bring the twisted end down over the middle of the tube to join and form the Pretzel shape.

  6. Add 1/4 cup of Baking Soda to the saucepan of water and turn down to a simmer. Add the Pretzels one at a time and cook for about 20 seconds each.

  7. Remove the Pretzel using a slotted spoon and place on a baking tray.

  8. Once all the Pretzels have been boiled add a sprinkling of salt to the top of them and bake in the oven for about 15 minutes until lovely and golden. Spin the tray around halfway through cooking to get a more even colour.

  9. Cool on a wire rack. Best enjoyed the day they are made.


Yoghurt Dough Bagels

These are really quick and easy to make. These aren't quite as dense as a traditional bagel, they're a bit softer, but slice them in half, toast them and then lather them with cream cheese and jam and they are delicious.

  1. Preheat oven to 180°C fanbake.

  2. Divide the yoghurt dough into even sized balls (a full dough recipe should make about 8 bagels).

  3. Roll each ball until it's smooth and round then press one finger through the centre of the ball and stretch until there is a hole in the centre about 2cm wide.

  4. Bring a pot of water to the boil (if your making sweet bagels you could add a teaspoon of honey to the water).

  5. Place the bagels in the water and boil for about 1 minute on each side (you might need to do this step 1 or 2 at a time depending on the size of your pot).

  6. Use a slotted spoon to get the bagels out and place them on a baking tray. If you want to go all out American bagel sprinkle some polenta on the baking tray before you place the boiled bagels on it.

  7. Beat an egg and brush over the tops of the bagels. If you wish to add some seeds to the tops of the bagels do this now (poppy seeds or sesame seeds).

  8. Bake for about 15 - 20 minutes until lovely and golden. Cool on a wire rack.
