I whipped up the scrummy Apple and Cinnamon cake for afternoon tea earlier this week. Master 5 isn’t a fan of cooked apple texture, so rather than cut it into cubes, I grated it with some skin still on. I already knew that if you leave carrot skin on in a cake it will react with the baking soda and turn green, I now know that it does something similar with apple skin! I find it crazy to say, but my middle babe turned 10 this week! I’m a fairly slack Mum and hadn’t organised a party for her (I’m using the Covid lockdown and Auckland’s level 2.5 as an excuse 🤭), but I will ALWAYS make sure the birthday girl has a cake! This year she asked for a blueberry cake, but didn’t specify decorations, so here’s my take on it. The cake is lightly lemon flavoured with blueberries through it and it’s iced with cream cheese icing. My little star and moon decorations (she’s keen on galaxy things right now) are Fresh As freeze dried Blueberries! I’ve got a recipe for a Jaffa Slice (thanks @vj_cooks) sitting in one of my many internet browser windows and every time I look for something on there, this delicious looking slice teases me. I haven’t got the ingredients needed to make this slice, however the craving for orangey chocolatey goodness overcame me and resulted in these delicious little morsels. They are an Orange Weetbix Afghan Cookie, and were amazing with my afternoon cup of tea. Last weekend when the weather was cold and yuck the kids got to talking about toasting marshmallows and S’mores. I checked the pantry and managed to find 5 marshmallows in the very bottom of the packet, so naturally we had to give it a go! Now these are no where near a traditional S’more, I made chocolate chip cookies rather than using Graham Crackers (what even are they 🤷🏼‍♀️), and the chocolate we had was #whittakerschocolate with a caramel centre.
